<p><img class="alignleft size-full wp-image-427" style="margin-right: 10px; margin-left: 10px;" title="ISOS" src="http://lechevrefeuille.com/wp-content/uploads/2012/01/ISOS.jpg" alt="In Search of Self" width="300" height="200" />In search of Self is Intensive therapies for mind, body and spirit, for those who wish to effect positive change in their lives through Massage, Meditation, Counselling and Tai Chi. <br />The courses are run by <strong>Dave Tabb</strong> who we have known for many years. These courses are being offered exclusively at Le Chevrefeuille for one week stay incorporating a five day course and include counselling, massage, meditation and tai chi sessions.</p>
<p>Daves interest in the field of self development began some thirty years ago, when he started to learn the art of Tai Chi. In the West the art of Tai Chi is seen as a form of exercise, in the East it is seen as being a system, not just a martial art, designed to promote the accumulation and flow of chi. Daves instruction in meditation came from Tibetan, and Theravada Buddhist Monks. Both here in U.K. and in Malaysia. <br />Tai Chi was taught by Daves friend and teacher Lim Chong Watt (A former international Tai Chi judge, and President of the Malaysian Tai Chi Association) who to this day instructs him in Chi transference and the healing power of massage. Through the study of meditation it became a natural step to pursue the understanding of what it is to be human and the psychology of this. Through this interest he first volunteered and trained to be a Samaritan, he did this for some years, and later qualifiying as a counsellor with CSCT (Counselling Skills and Counselling Training). He qualified as a Humanistic Counsellor, and further to this he became a member of BACP, The British Association of Counsellors and Psychotherapists (<a title="bacp" href="http://www.bacp.co.uk" target="_blank">www.bacp.co.uk</a>). The largest professional body representing counselling and psychotherapy in the UK, which sets the standards for therapeutic practice.<br /> Later through his interest in chi transference he trained and became a member of the Holistic Healers Association (HAA). During this period of development he has practised and taught Tia Chi in the U.K. and abroad. he was bereavement counsellor for a number of years and trained as a cancer counsellor. <br />Meditation and massage are both his regular practice. Through the study and practice of these therapies he became increasing aware of the health benefits of the flow of energy, between these therapies, which compliment each other perfectly and the accumative benefit of intensive, one to one, practice. This is the ISOS Approach.</p>

			<content:encoded><![CDATA[<p>Culinary Courses in France are becoming more and more popular, especially cookery courses in the Perigord Noir as it boasts to be the gastronomic capital of the country.</p>
<p><strong>Le Chevrefeuille Cookery School Dordogne</strong> was established in 2003 but was only available for a limited time due to the success of Le Chevrefeuille restaurant. It has now been re-established by popular demand and we will be running courses throughout the 2012 season. They are a great way to learn some cookery techniques that will elevate your food to restaurant standard. If you cant wait until then, here is my Tapanade recipe which, is fantastic with fresh bread and a cold crisp white wine.</p>
<ul>
<li>2 Tins of pipped olives (I prefer black)</li>
<li>1 Clove of Garlic</li>
<li>10 Anchovies Fillets</li>
<li>40 Grams of Capers</li>
<li>125 Grams of almond powder  </li>
</ul>
<p>Put all ingredients in a food processor turn on and start to add extra virgin olive oil, about a cup full. Finish with black pepper and lemon juice to taste.</p>

<p>I am often asked about the region&#8217;s products as they are very different, almost mystical,  The two I have picked today are Foie gras and the elusive truffle.</p>
<p>Probably the most famous product of the region Foie Gras, Its flavor is described as rich, buttery, and delicate, unlike that of an ordinary duck or goose liver. Foie Gras is sold whole, or is prepared into mousse, parfait, or pâté (the lowest quality), and may also be served as an accompaniment to another food item, such as steak. French law states that &#8220;Foie gras belongs to the protected cultural and gastronomical heritage of France.</p>
<p>Truffles are also a well known product of the Perigord Noir, a truffle is the fruiting body of an underground mushroom; spore dispersal is accomplished through fungivores animals that eat fungi. Almost all truffles are ectomycorrhizal and are therefore usually found in close association with trees.</p>
<p>There are hundreds of species of truffles, but the fruiting body of some (mostly in the genus Tuber) are highly prized as a food. The 18th-century French gastronome Brillat-Savarin called these truffles &#8220;the diamond of the kitchen&#8221;. Edible truffles are held in high esteem in French, Spanish, northern Italian and Greek cooking, as well as in international haute cuisine. Prices are about Euro 800.00 a kilo.</p>

<p>Self catering accommodation is big business in the Dordogne Valley with hundreds of properties to choose from most of which are beautifully restored and converted farm houses. The design of these buildings keeps them cool in the summer months and warm throughout the cold winter months. <br />Most people visiting this magical area seek out the oldie woldie accommodation to get the full French experience. <br />Many accommodation providers like Le Chevrefeuille offer the full range of facilities including evening meals which allow you to meet other guests, which can be a lovely way of planning the next days events.</p>
<p>When you are searching for your self catering accommodation in France you will come across the word Gite, A &#8220;Gîte&#8221; is a holiday home that is available for rent. <br />Gîtes are usually fully furnished and equipped for self-catering. Many owners choose to handle their own rentals, and you can find these by searching online on the multitude of listing sites or by checking with the local tourist information office. Technically speaking, to be called a gîte, the owner must live close by in order to provide help, assistance, and a warm welcome to guests Gîtes are generally old farmworkers&#8217; cottages or converted outbuildings and barns within proximity of the owners&#8217; principal residence. This type of holiday accommodation is sometimes regarded as &#8216;basic&#8217; in terms of facilities; however, most gîtes are generally very well kept, and a growing number will have excellent facilities such as fully fitted kitchens, en-suite bathrooms, TV, DVD and access to a swimming pool or other sporting activities.</p>

<li><strong>Chateau de Mareuil </strong>The Mareuil Castle formed one of the four baronies of Perigord. Owned by the Talleyrand family, it comprised an effective defensive system. <li><strong>Chateau de Montfort </strong>The Montfort castle has been razed to the ground 4 times. Once in 1254 by Simon of Montfort, once during the 100 year war, once under Louis the 11th and finally under Henry the 4th. Restauration work has been underway since the 19th century. <li><strong>Chateau de Puyferrat </strong>The Puyferrat Castle was built in the 16th century and features a totally covered walkway that offers a panoramic view onto the neighbouring countryside. <li><strong>Chateau de Puyguilhem </strong>The Puyguilhem Castle was built during the First Renaissance and is a fine example of a Francoise 1st castle. Located near the village of Villars.</li>

<li><strong>Chateau des Bernadiers </strong>Built on the side of a rocky slope around a high tower with views dominating Nizonne. This castle was no stranger to the 100 year war.
